Juicy Stuffed Turkey Burgers


Makes 4 servings. Total preparation time: 15 minutes.

1. In a large bowl, mix both meats, garlic, onion or shallot, salt, pepper, and allspice together.

2. Divide meat mixture into 4 equal portions. Using half of each portion of meat, encase the cheese and form a mini burger patty. Mold remaining half-portion of meat around the mini patty and seal the edges to form a ball. Flatten the ball with the palm of your hand, forming a 3/4-inch-thick patty thinner around the perimeter of the cheese toward the outter ends. To avoid a burger blow-out, completely seal in the cheese.

3. Grill burgers on a skillet, 6 minutes on each side. Allow to rest for 5 minutes tented with foil. Serve with burger buns and fixings.


3/4 pound ground grass-fed 85% lean beef, bison, or veggie beef
3/4 pound ground turkey or chicken
1 clove garlic, minced, or 1 teaspoon garlic powder
1/2 cup finely minced onion or 1 shallot, finely diced
3/4 teaspoon salt or Worcestershire sauce
1/2 teaspoon cayenne or black pepper
1/4 teaspoon allspice 4
(1/4 inch) cubes organic white aged cheddar
