Mashed Red Potatoes with Herbs

Replace your regular mashed potato recipe with this healthy substitute. Red potatoes contain five times as much of the antioxidant anthocyanins compared to Russet potatoes. This recipe is cholesterol-free, low fat, high fiber and, most of all, delicious!

Makes 8 servings. Total preparation time: 30 minutes.


1. Quarter and boil potatoes in salted water until tender, about 30 minutes. Drain water from pot, leaving a little water at the bottom, and add butter substitute, and soy creamer or puree’d raw cashews.

2. Mash with potato masher for desired consistency. Add herbs, salt and pepper to taste.

8 medium red potatoes

1⁄2 cup soy creamer
1/2 cup soy milk creamer or 1/2 cup puree’d raw cashews in water until smooth
2 tablespoons Earth Balance or Benecol butter substitute
1 1⁄2 teaspoon salt to taste
Ground pepper to taste
1⁄4 cup herbs (dill, basil, oregano, thyme, chives, mint, parsley, or garlic)
