Overnight Creamy Steel Cut Oats with Cherries, Cacao Nibs and Almond Butter
Prepare this filling, tasty oatmeal dish the night before. Wake up, assemble and go!
Makes 4 servings. Total preparation time: 5 minutes.
- Combine soy milk creamer, almond milk, 1 cup water, oats, cinnamon, allspice, dried cherries and 1/4 teaspoon of salt in a covered bowl. Cover and refrigerate overnight.
- The next morning, scoop out half of mixture and microwave for 1 1/2 minutes, or cook over stove until tender. Add water if too thick. Top oatmeal with 1/2 tablespoon almond butter, cacao nibs, ground flaxseed and almond slices with a drizzle of maple syrup. Enjoy!
1/2 cup dried cherries
1 cup soy creamer or coconut creamer
1 cup unsweetened, unflavored almond milk
1 cup steel-cut oats
1/4 teaspoon ground allspice
1/4 teaspoon kosher salt
1/4 teaspoon cinnamon
1 tablespoon almond butter
2 tablespoons sliced almonds
2 tablespoons cacao nibs
1 tablespoons ground flaxseed meal
1/2 tablespoon maple syrup
