Savory Breakfast Roll
Roll it up for breakfast! Turkey sausage is healthier than pork sausage because it has more protein, less sodium and fat calories. Shop wisely and eat well.
Makes 6 servings. Total preparation time: 10 minutes.
- In a skillet, mash up sausage and cook for 6-7 minutes or until done. Season with salt and pepper to taste then remove sausage onto dish with paper towel to absorb grease.
- In same skillet, add onion and cook with a small amount of water for 2 minutes. Add mushrooms and cook for another minute. Add green/red pepper then sautée until onion becomes clear. Fold in spinach or greens to wilt.
- To assemble, lay out 6 tortillas and sprinkle with cheese. Add onions, peppers and sausage then roll up.
- Wrap up leftovers with parchment, foil or plastic wrap to store for later. Warm in microwave for 30 seconds to 1 minute to reheat.
1/2 lb. ground spicy turkey sausage or vegetarian sausage
salt and pepper
2 tablespoons Earth Balance butter substitute, melted
1 cup cheddar cheese, thinly sliced or grated
1/4 cup finely diced onions
1/4 cup finely diced green or red pepper
1 cup sliced mushrooms
2 cups spinach or greens
6 corn tortillas, wheat tortillas or whole grain flatbread
We realize that you may not always have the time to cook meals from scratch, and that a quick and easy substitution may be needed. We always recommend cooking the real thing, but in a pinch you can try this instead:
Buy frozen turkey sausage, egg and vegetable wrap or burrito. Add sliced mushrooms and red bell peppers to the wrap. Serve with cherry tomatoes and hot sauce. Enjoy!
