Sesame-Lime Rice Salad Bowl

Tofu, a staple of Asian diets, absorbs flavors well, making it ideal for savory marinades. This flavorful and filling rice salad bowl balances traditional Asian flavors for a perfect, delicious light meal. Serve chilled.

Use tofu to make recipe gluten free.

Makes 4 servings. Total preparation time: 7 minutes.

Preparation


1. Prepare Sesame-Lime Sauce.

2. In a large bowl, toss lettuce, carrots, celery, red bell pepper, peas, cherry tomatoes, dried cranberry, and cilantro with Sesame-Lime Sauce. Chill.

3. Right before serving, add brown rice and veggie chicken, and toss salad well. Top with flaxseed meal and peanuts.

Ingredients

3⁄4 cup Sesame-Lime Sauce (recipe in Sauces section)

2 pouches Uncle Ben’s Brown Rice, steamed according to package instructions
1 package diced veggie chicken strips, diced seiten (wheat gluten), or diced firm tofu, cooked
6 cups romaine lettuce
1 cup shredded carrots
2 celery ribs, diced
1 red bell pepper, diced
1 cup defrosted frozen peas, diced sugar peas, snap peas or green beans
1 cup cherry tomatoes, halved
2 tablespoons dried cranberries or 1 diced apple
1⁄2 cup cilantro
1 tablespoon flaxseed meal
1 tablespoon peanuts or almonds

We realize that you may not always have the time to cook meals from scratch, and that a quick and easy substitution may be needed. We always recommend cooking the real thing, but in a pinch you can try this instead:

Buy pre-cooked brown rice packet and vegetarian chicken strips. Toss with salad greens, pre-cut julienned carrots and Asian vinaigrette. Top with cherry tomatoes, cilantro and peanuts for extra flavor. Enjoy!
