Sherry-Dijon Vegetable Dressing

With zero added oil, this sherry-Dijon dressing is low in “bad” fat. Cashews offer a dose of healthy fat that promote cardiovascular health and add creamy texture and nutty flavor! This delicious dressing also features walnuts, which are high in antioxidants and can help prevent certain types of cancer. For a quick substitute, any pre-made Dijon vinaigrette salad dressing will work in a pinch.

Makes 8 servings. Total preparation time: 5 minutes.


1. Put all the ingredients in a blender and purée until smooth. Add more water if it’s too thick. Makes eight 1/4-cup servings. Drizzle over grilled vegetables. Store in airtight container in refrigerator for seven to 10 days.
