Skewered Winter Fruit Kabobs with Creamy Coconut-Pineapple Sauce

Makes 12 servings. Total preparation time 20 minutes.

1. Prepare our Gingered Fruit Salad, cutting fruit (except oranges) into 1-inch chunks. Peel and section oranges. Substitute red grapes or strawberries for the cranberries.

2. Prepare Coconut-Pineapple Sauce. Set aside to chill in the refrigerator.

3. Skewer strawberry or red grape first, then pineapple, Asian pear, orange wedge and apple.Set skewered fruit onto a lined baking sheet. Cover tightly with plastic wrap and refrigerate until ready to serve.

4. Place Coconut-Pineapple Sauce in a bowl and transfer skewers onto a platter. Garnish sauce with orange zest and mint leaf. Can be made up to six hours ahead.
