Tomato Caprese Salad and Greens

A simple Italian favorite! When paired with mozzarella or olive oil, the nutrients found in tomatoes become more bioavailable. Perfect with Honey Date Balsamic Dressing.

Tip: If you plan on storing in the refrigerator, keep items (especially dressing) in separate Ziplock bags to keep fresh. Pull from bags and then combine. It’s okay to leave the cherry tomatoes whole instead of halving them. This will keep them fresher longer in the refrigerator.

Makes 4 servings. Total preparation time: 5 minutes.


  1. Combine drained beans and cherry tomatoes. Reserve mozzarella in covered container until ready to assemble salad.
  2.  Divide mixed greens into four servings. Top with tomato and garbanzo mixture, then add mozzarella. Add dressing and garnish with fresh basil leaves. Enjoy!


1 can garbanzo beans drained

4 cups cherry tomatoes

16 ounces of buffalo mozarella cut into 1/4 inch slices

16 Basil Leaves, or sprinkle 1 tsp. dried basil into dressing before serving

8 cups baby mixed greens, such as baby arugula, spinach, kale, and chard

1/2 cup Honey Balsamic Date Dressing

We realize that you may not always have the time to cook meals from scratch, and that a quick and easy substitution may be needed. We always recommend cooking the real thing, but in a pinch you can try this instead:

Combine drained beans, cherry tomatoes and mozzarella balls. Toss with pesto. Serve on top of mixed greens drizzled with balsamic vinaigrette. One serving is one cup of cheese over 2 cups of greens. Enjoy!
