Two Egg Veggie Scramble
You’ll love this Two Egg Veggie Scramble! An easy way to start your day with a full serving of veggies.
Makes 1 serving. Total preparation time: 7 minutes.
- Heat skillet on medium high heat and brush pan with oil. Crack both eggs and add greens on top of yolks.
- Add black beans to warm up next to eggs. Season eggs and break up yolks to scramble, mixing with beans. Serve when eggs are cooked through.
- Serve with hot sauce, diced avocado on top and cherry tomatoes on the side with 1 slice of sprouted grain toast or corn tortilla. Enjoy!
1 teaspoon coconut, olive or grapeseed oil
2 omega-3 eggs
1 cup raw spinach or arugula
1/4 cup black beans
1/4 cup cherry tomatoes
1/4 avocado diced
1 slice sprouted grain toast or 1 corn tortilla warmed
salt and pepper to taste

Buy a frozen pre-made egg and vegetable breakfast sandwich. Serve with 1/4 cup canned black beans (warmed), hot sauce, 2 Tbs. diced avocado and 1/2 cup cherry tomatoes for extra flavor and nutrients. Enjoy!
